We have designed a ½ day workshop to take you from novice to pizza hero, whatever your current level of skill and equipment

Our expert Pizzaiolo will guide you through the key stages of Pizza making.  You will make sourdough from scratch, stretch, top and cook your own pizza, and you'll be given your own ripe sourdough starter and be taught how to look after it.

Dough Making & Balling

Basic Principles, Recipies, Yeast vs. Sourdough, Gluten or Gluten Free.  Time and Temperature Considerations.

Stretching & Topping

Crust forming, palming and 'over the knuckles' stretching technique.  Key do's and dont's

Launching, Turning & Extracting

Preparation, tools, temperature.  Avoiding sticking, recovering from holes & flaming crusts.

Finishing & Serving

Tips for finishing and slicing, what to add  all'uscita (once the pizza is out of the oven)
